Water is an essential component of all living things on earth. Where there is no water, there is no life. It has been known all along that the basis of any product is water and quality of the product, as well as its flavor, depends on water properties.

For its products the plant uses artesian water of centralized drinking water supply. It comes to “Afanasy” from the centralized water supplied intake and immediately enters storage tanks. There are two above ground and two underground tanks on the territory of the plant. It is necessary to have a daily supply of water for the case of emergency to avoid production hold-ups. Then the water goes through mechanical cleaning filters to the water treatment station, where it undergoes two stages of processing.

The first stage is feeding of a special oxidant. This allows binding up iron which is in the water and transferring it into insoluble compounds. Iron is not needed for products production as it can be the cause of off-flavors. Next the water passes through sand filters with the cleanest sand and a special additive that helps bind up insoluble compounds into complexes and besiege them in the sand.

Then the water passes through carbon filters that purify it from extraneous odors and flavors, if present, and retain the introduced oxidant. At the output there is automatic control equipment which checks the quality of the achieved water, its transparency. To avoid the possible presence of coal particles from the carbon filter in the water it passes an extra fine purification through 5 micron filters. After that water enters the ultraviolet disinfection station.

The second stage of water treatment is balancing salt composition in water and saturating it with the necessary microelements. Initially the salt composition in water is not balanced but for the production of beer and other beverages it is very important. Nowadays there are no exact requirements to the water for the production of beer. Each manufacturer is proud of his water and the taste of beer depends precisely on the used water. Of course, there is a common pattern that dark beers need harder water while light ones – softer. Also for kvass special water is needed as its flavor profile differs from the flavor profile of the beer.

For fermented beverages the content in the water of microelements such as magnesium, calcium, chlorides and sulfates is important. But their presence in precise proportions is essential as large content of microelements gives the water off-flavors. For example, high content of sulfate in water will produce a bitter taste. As yeast is alive, a particular environment is needed for its multiplication.

To balance the water on the ion composition there are reverse osmosis systems at the plant. Their usage helps optimally control salt content. The water passes through the membranes and “unnecessary” salts are removed while “necessary” remain.

After that the water enters special containers made of food-grade stainless steel for intermediate storage. From them it is directly supplied for products preparation. Also from these containers the water is supplied for technical purposes, such as washing of equipment. Of course, this increases the operating costs and investments as capacity of the water treatment stations was selected on the assumption that the water would be used for washing of all the equipment as well.

Quality of the produced product is on the first place for the plant, so for the production and technical purposes only passed through several purification stages water is used.
